Montepulciano your typical pizza and pasta wine but from the organic Winery Fattoria la Valentina you will find an incredible interesting and complex variant. Sabatino di Properzio’s Montepulciano is as stylish as his labels. The grapes used are from old vines and increasingly organically cultivated. Destemming was followed by a seven-day fermentation on skins in stainless steel vats.The 100% Montelpulciano had 7 days skin contact as followed by twelve months’ ageing in a combination of cement and stainless steel vats. Fifteen percent of the wine was aged in wood. First-class peppery Montepulciano, with all the exuberant fruit and spicy character of the grape, plus an extra degree of refinement from this excellent producer.
