Region: McLaren Vale
Frank Mitolo's philosphophy comes true in this wine. 'Audendum defendere fides tuas nonque conformandum plebi est' - 'One must have the courage to stand up for your beliefs and not conform to the masses'. Serpico was a famous, audacious New York cop and it is a true statement Mitolo wants to make. Like the Jester some percentage of the grapes are dried "the Amarone way" and the body of the wine is established by a long fermentation and maceration period. The palate shows immense power and concentration which is followed by pillars of ripe, silky tannins. The seamless integration of oak, tannin and fruit allow this distinguished wine to be drunk now. If carefully cellared it could be kept for 15 years.
