Tasmania is the coolest wine region of Australia and ideally suited for producing premium sparkling wine to rival the world's best. This wine has great complexity, partly barrel fermented and the complete malolactic fermentation ensures a creaminess in the finished wine. A lifted nose of intense lemon and honeysuckle aromas from the Chardonnay fruit, coupled with fresh strawberries and rose petals from the Pinot Noir. The years of yeast age have added aromas and flavours of shortbread, brioche and toast to the nose and palate, with a lovely layered texture to the mouth feel.
