Producer: Vincent Girardin
Vincent Girardin was born in Santenay, in the Cote de Beaune and is part of a winemaking family with roots back to the 17th century. At the Domaine the grapes are harvested by hand, then sorted twice, once in the vineyard and for a second time in the winery. The sorting process eliminates all elements that are not fully ripe or not in the best condition. The presses are pneumatic in order to preserve the purety of the grapes. Next the wines are aged in oak barrels. This carefully controlled ageing process allows the wines to achieve their full potential. The process of making the white wines takes place in 2 stages. Firstly the active phase with the malolactic fermentation, which can take between 3 to 10 months. This is followed by a further maturing phase, during which the wine stabilizes over 5 to 8 months. One month before bottling, the wines are assembled and fined. This is followed by light filtering, just before bottling. The 1er Cru Les Murger des Dents Chien is a prime example of a classic Burgundy Chardonnay, made by this excellent producer who really concentrates on producing pre-dominantly white wines.
