The long ripening periods in the Eden Valley are perfect for flavour accumulation and intensity, and the flavour development in 2004 was terrific. A feature of the Eden Valley Chardonnay is the total use of a natural or 'wild yeast' ferment, where the juice is encouraged to ferment with the indigenous yeasts present on the grape skins from the vineyard. Further palate structure is built through extended lees contact and regular lees stirring. Approximately 50% of the blend was fermented and matured in 1 and 2-year-old fine grained French barriques and hogsheads; these add another degree of fragrance and finesse to the wine.
